BBQ - How to BBQ better. by Dave R Jones
This summer has been a good bbq summer for me, we've had good number of them. There are a few thigs that i've learnt along the way which have helped improve our BBQs at least.Firstly the choice of coal, in my opinion charcoal briquettes, you know the ones that are just squashed bits of charcoal, well they are absolutely rubbish. I've had no success using them what so ever. Avoid them like the plague. They take an lifetime to heat up and then they just go out on you, you may as well try to burn rocks.Any way thats my rant over, what I prefer is the hardwood charcoal, it burns hotter but doesn't last as long, but is far more controllable than the briquettes. If you want more heat put more coals on, if you want less heat don't use as much. The good thing with the hardwood charcoal is if you keep the coals close they keep burning and don't just go out. Much better for you sanity.Secondly is smoking on the BBQ, placing the smoking chips in a small tin can then placing this amongst the coals is the best way to create smoke. If you try to put the chips directly on the coals they just burn up too quickly and the water on the chips put you coals out.The choice of wood also has an effect on the flavour imparted to the food.Another tip is to try soaking the chips in something other than water, try apple juice maybe or whisky is another good one.The cleanest and most reliable method for lighting the charcoal in the first places is to use, a chimney starter, these are absolutely brilliant for getting the coals lit in the first place. They are quick too, it only takes about 20mins to get things going.For direct cooking spread the coals evenly in the bottom of the BBQ, for indirect cooking pile them in the corner and cook away from them. The heat then circulates when you put the lid on the BBQ.
